Gingerine jam




I was given a gingerine a couple of days ago, from the old lady who supervises the charity shop where I purchase most of my and my daughter's clothes from. A huge and rather heavy oblong watermelon that you can only eat once it's been cooked. The old lady spared a few tips, advising me to mostly follow my instinct as to how long to cook the mixture for, how much sugar should be added, etc.
So here my recipe :
1 gingerine (about 2,5kg of pulp, once skinned and seeded), 3 organic oranges, 1,5 kg of cassonade or brown sugar, a drop of eau de vie (strong alcohol), a pinch of cinnamon. Agar agar.
 - Chop everything small. Marinate over night.
 - Simmer for about 1/2 hour. Let it cool down. 
  - Simmer for another 1/2 hour. 
 - Add the agar agar (first diluted in half a cup of cold jam syrup) and simmer for another 5mn.
 - Put in jars.
 - Try to wait until it properly cools down before tasting it. (Now, this is the hardest bit...)
