Gingerine jam
I was given a gingerine a couple of days ago, from the old lady who supervises the charity shop where I purchase most of my and my daughter's clothes from. A huge and rather heavy oblong watermelon that you can only eat once it's been cooked. The old lady spared a few tips, advising me to mostly follow my instinct as to how long to cook the mixture for, how much sugar should be added, etc.
So here my recipe :
1 gingerine (about 2,5kg of pulp, once skinned and seeded), 3 organic oranges, 1,5 kg of cassonade or brown sugar, a drop of eau de vie (strong alcohol), a pinch of cinnamon. Agar agar.
- Chop everything small. Marinate over night.
- Simmer for about 1/2 hour. Let it cool down.
- Simmer for another 1/2 hour.
- Add the agar agar (first diluted in half a cup of cold jam syrup) and simmer for another 5mn.
- Put in jars.
- Try to wait until it properly cools down before tasting it. (Now, this is the hardest bit...)

The heart of the shield is the Vesica
Pisces, comprised of two equal and interlocking circles that share a
radius. This symbol both evokes and represents the polarities of life:
- Earth, Mother, Subconscious, Underworld, Shakti, Goddess, Danu and Shadow
- Heaven, Father, Higher Mind, Vision, Shiva, God, Dagda, Illumination.
The place of intersection of the two
circles is the portal, the vesica, the yoni, the fish, Pisces, where the
energies marry and merge. It is within this central Mystery that
mystical truths may be embodied and noble legends lived out on earth.
The larger circle that holds the two is the circle of the Creator, the Void, the Universe. It is the Circle of Life.
